Sweet Potato & Green Veg Bowl
One of the best ways to help the environment is to reduce your intake of meat and eating vegetarian doesn’t mean eating plain food! Here is a veggie bowl recipe that gives you all the flavour you need along with a healthy serving of vegetables and good carbohydrates.
What you’ll need:
1 large sweet potato
1 cup of quinoa
1 can of chickpeas
olive oil
squeeze of lemon
2 tsp paprika
1 bunch broccolini
1 handful of snow peas
1 avocado
1 handful of mixed lettuce (or spinach)
1 container of spicy capsicum dip (optional)
sesame seeds to serve
How to make it:
Preheat your oven to 180 degrees celsius
Wash and chop the sweet potato into cubes and spread onto a baking tray. Sprinkle over some oil, salt and pepper and put in the oven. Let the potato cook until it is soft and golden (about 45 - 50 mins). If you want to speed up the meal, microwave the sweet potato for about 8 minutes before putting in the oven which will reduce cooking time by 15-20 minutes.
While the sweet potato is cooking, prepare the chickpeas by draining the water from the cab and adding chickpeas to a bowl with a dash of olive oil, squeeze of lemon and the paprika. Coat the chickpeas and spread onto another baking tray. Add to the oven and cook for 30 minutes.
Prepare the snow peas by removing the ends and cut the broccolini into thirds.
Cook the quinoa according to packet instructions. When quinoa is close to being ready, add the broccolini and snow peas onto the chickpea tray in the oven and cook for 10 minutes.
To assemble the bowl, first add quinoa and then top with the sweet potato, chickpeas, broccolini and snow peas. Add a handful of the mixed lettuce and slice up some avocado to rest on top. Sprinkle the sesame seeds over the avocado and for a bit of extra flavour, add a large spoonful of the spicy capsicum dip to the side.
